Copycat Enchirito (Taco Bell Secret Menu)
The Enchirito is not an official menu item and never was in its current form — it is a secret-menu build with a forty-year history, and the home version is actually the more faithful one, because the whole point is plating. The secret-menu page gives the order: a Bean Burrito ($2.59, 360 Cal) smothered enchilada-style, covered in red sauce with extra melted three-cheese blend on top. At home you skip the ordering script and go straight to the plate.

Copycat Taco Bell Enchirito — ready in about 25 minutes, makes 2 enchiritos.

Illustrative stock photo — not a Taco Bell product photograph.
Ingredients (makes 2 enchiritos)
- 2 large flour tortillas
- 400g refried beans, warmed with a little cumin
- 300ml red enchilada sauce
- 100g three-cheese blend (mozzarella, cheddar, pepper Jack), shredded
- Diced onion, to finish (optional)
Method
- Warm the beans and roll them into the tortillas, seam-side down, in an ovenproof dish.
- Pour the red enchilada sauce over the top until the burritos are fully covered — this is the smothered part, and skimping on it is the one mistake.
- Blanket with the three-cheese blend and bake at 200°C until the cheese bubbles and browns at the edges, about 12 minutes.
- Serve in the dish with a spoon, not in your hands: an Enchirito is eaten with a fork, which is exactly what separates it from the burrito it started as.
The restaurant figures are estimates from the components (the secret-menu page labels them as such: about $2.59 and about 360 Cal for the bean-burrito base, before the extra sauce and cheese). The home version will run heavier — the smothering is the point, and sauce plus extra cheese are not free. Do not confuse this with the original 1970s Enchirito, which had seasoned beef and olives; this is the modern fan build, and it is the one people actually order.
